Garlic Lime Chicken
Garlic Lime Chicken
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon herbes de provence
1/4 teaspoon cayenne pepper
1/2 teaspoon dried parsley
4-6 boneless, skinless chicken breast halves
1 tablespoon olive oil
2 teaspoons garlic minced
1 large lime
In a small bowl, mix together salt, black pepper, cayenne, herbes de provence and parsley. Sprinkle spice mixture generously on both sides of chicken breasts. Coat each breast evenly with 1 tsp of minced garlic. Squeeze half the lime over the chicken.
Cover, set aside (in fridge) for at least 30 minutes.
Preheat oven 400 degrees. Squeeze the other half of the lime over the chicken, even coat each breast with 1tsp minced garlic, drizzle with a little olive oil. Bake 30 -40 minutes (depending on how thick your breast are). Let rest for 15 minutes before cutting into the chicken.
