The boys really like this recipe. I make this one ahead of time to take camping with us.
Chili Spaghetti Casserole
1 lb uncooked spaghetti ( you can use any type of pasta)
1 lb ground beef ( you can use pork or turkey)
1 med onion, chopped
1 can vegetarian chili w/beans
1 can italian style stew tomatoes
1 1/2c shredded cheddar cheese
1/2 c sour cream ( you can use low fat)
1 1/2tsp chili powder
1/4 tsp garlic powder
pepper/salt ( to taste, as always)
Preheat oven to 350. Spray 9x13 pan with cooking spray. Cook and drain pasta and place in pan.
Meanwhile, cook meat and onion in skillet, seasoning with pepper and salt. Drain, stir in chili, tomatoes, 1 cup of cheese, sour cream, chili powder and garlic powder.
Add mixture to pasta. Stir until well coated. Sprinkle remaining cheese on top. Cover with foil, you have have to "tent" it slightly in the middle so it doesn't stick to the cheese. Bake 30 mins. Let stand 5 minutes before serving.
