Chicken Enchilada Soup

The recipe I use for chicken enchilada soup keeps changing and evolving.  Here is the lastest we are using...  Remember I am currently cooking for a family of 5, with three teenage boys.  Feel free to adjust quantities to fit your family.

Chicken Enchilada Soup

2 cans of black beans (undrained).
1 can of northern beans or white beans (undrained)
1 can of corn (drained)
2 cans of rotel
2 large cans of red enchilada sauce
1 large can of crushed tomatoes
2 cans of chopped green chilies (optional)
4-6 chicken breasts,shredded

Throw it all in the crockpot on low all day. Right before you serve it shred the chicken and put it back in.

Serve with tortilla chips, shredded cheese, little sour cream
