Pasta Fagioli

When I think of comfort food this is one of the first things that comes to my mind. This is a absolutely wonderful soup. It has quickly become a favorite around here. I'd like to thank Tammy for sharing it with us.


Pasta Fagioli


1 lb ground italian sausage
3/4cup carrots sliced, bite size pieces
1 large onion chopped
3/4 cup chopped celery, bite size pieces
1 can diced tomatoes
1 jar Hunt's spaghetti sauce (traditional)
4 cans beef broth
1/2 cup frozen chopped spinach (thawed, drained)
1lb cooked pasta(macaroni, bow tie, small shells etc.)
2 TB minced garlic
1 can kidney beans
1 can northern beans
2 tsp italian seasoning
1/2 tsp ground black pepper
salt all to taste.



Brown sausage. Add onions, celery and carrots to sausage. Once the carrots start to get tender then add the garlic and cook until carrots and garlic are done. Add broth, seasonings, tomatoes and pasta sauce, bring to a boil. Reduce heat, add the beans and continue to simmer for about 15 minutes. About 5 minutes before serving add the cooked pasta and spinach until heated.
